30 Lessons I Learned Big Time at 30

It's my birhtday! While there will be cake and presents and friends and family today, I always feel like my birthday is a bit like New Years. It's a time for me to reflect on the year, what I did, how I succeeded (and failed) and how I want to move forward into my next year. THIS YEAR WAS HUGE! I completed another Masters Degree, I started my blog, I went on my first solo adventure and boy did that all come with some big 'ole life lessons. I truly think this year has been one of my biggest growth years and am so proud what I've accomplished. After some reflection here are the big shiny lessons that came at me this year!

Hooked on Hygge

Last summer I spent a few weeks touring around Scandinavia and had a few magical days in Denmark. Copenhagen, Denmark was by far my favourite stop on the trip and ever since I left the city, I've been plotting my return. Something was just different there. I couldn't put my finger on it but it just felt so good. Yes it was cold (16 degrees on the warmest day) and very rainy but it was also so quiet, cozy and relaxed. I didn't have the word for it but later found out the the Danish do have a word for it and it's 'hygge'.

Summer Quinoa Salad

As an OG gluten-free girl I've been eating quinoa for years. It's light but still keeps me full and offers a bit of protein for the days when I'm on the go. With the additional of some avocado and black beans this salad is packed with healthy fats, protein and fibre. This is one of my go-to recipes now and I usually make it on Sundays so that I have it on hand for lunches during the week. Based off the "Stuffed Avocado Salad" recipe by Angela Liddon in Oh She Glows Everyday, I've played with this recipe over time and it has morphed into this recipe. I hope you enjoy! Bon appetit!

Headaches 101

Does this sound like you? Towards the end of the day a few times a week you develop a headache radiating from the back of your head to your forehead or just behind the eyes. You have intermittent neck pain that is especially bad when your stress levels and workload increase. Sometimes you pop and Advil or Tylenol and it kind of helps but usually by the next morning your headache is gone...until it comes back again. For many of my patients this non-stop loop of headaches is exhausting, frustrating and limits their ability to engage in and enjoy their lives. I can't believe this post hasn't happened sooner! I'm thrilled to have Alena Luciani of Training2XL on the blog today and showcase what a fire cracker she is! Sweet Potato Veggie Tofu Pad Thai

Eeek! I am so excited to share this recipe with you guys today! I got a spiralizer over the weekend and well, I'M OBSESSED! This recipe was already on repeat at my house but now it will be a weekly feature. I was lucky enough to have Megan Gardner of megscucina.commake this for me a few weeks back on a girls weekend and it blew my mind! Pad Thai is one of my absolute favourite dishes and her take on it is not only super healthy but insanely delicious. I find it gets better with time so be sure to make lots if you want leftovers!

Golden Boy: Alexander Kopacz

I know I don't need to tell you again that I was absolutely GLUED to the PyeongChang Olympics so I literally just feel like I'm coming down from my Olympic high and BAM! the Paralympics start Friday! So many great moments during the Olympics but one of my favourites has to have been watching Justin Kripps and Alex Kopacz race to their gold medal in the 2-man bobsled! I know Alex from his varsity athletes days at Western University here in London and it has been so fun to continue to watch his athletic journey unfold. When watching the Olympics we often don't think about the sacrifice that athletes make and I am so grateful that Alex agreed (literally straight off the plane from Korea) to share some of the highs and lows with us today!
